Making Gazpacho with Mum

Back by popular demand is my fabulous 83-year-old mum helping me make a refreshing, quick and super healthy gazpacho. As you can probably see from the video (including the ‘blender blunder’!), we don’t really cook by following a recipe or measuring anything! That said, here are the basic quantities we used – please do adjust to make it your own though: Serves 4 – 6: · ½ red onion · 1 clove garlic · 4 large, ripe tomatoes · ½ cucumber · ½ red pepper · ½ yellow pepper · Small handful flat leaf parsley · 2 cups tomato juice · 2 tablespoons extra virgin olive oil · 3 tablespoons apple cider vinegar · Salt and pepper to taste Blitz everything in a blender and leave in the fridge to chill for an hour or two. To serve, you can finely chop some more cucumber/pepper and sprinkle it on the top with a drizzle of olive oil. Leave a comment below and let me know how you get on!
