My cacao brainy balls Recipe

For much of my professional life, I snacked on chocolate biscuits or crisps to get me through the day – not realizing they were sending my blood sugar soaring and crashing. Although I created this quick and easy recipe with busy professionals in mind, it’s perfect for anyone who wants a delicious snack that will keep their energy up and focus sharp.

The walnuts, pumpkin and chia seeds will not only keep you feeling full but also boost your brain (and help your skin glow). The cacao powder is a natural mood-lifter as well as a wonderful source of health-protecting flavanols, which also improve cognitive function.  Give it a go and let me know how you get on!

Recipe

Makes about 25 balls.

200g Medjool dates
150g walnuts
50g raw cacao powder
25g pumpkin seeds
25g chia seeds

1. Blitz everything in a food processor.

2. Take a tablespoon of the mixture and shape into a ball. Repeat until all the mixture is used up. (If there are any bits of seeds or nut which are left from the mixture, just mop them up into the ball as you would with Play-Doh).

3. Leave in the fridge for a few hours to set.

4. Enjoy!

Keep in an airtight container in the fridge.

    I have done these, but without the pumpkin seeds. Sounds good and healthy to add them. I sometimes dip the balls in bittersweet melted chocolate and call them truffles!
